Creamed Peas
Ingredients:
2 cups frozen peas
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk (whole milk or 2%)
1/4 cup heavy cream (optional for extra richness)
Salt and pepper to taste
1/4 teaspoon sugar (optional)
Pinch of nutmeg (optional)
Fresh parsley for garnish (optional)
Directions:
Cook the Peas: In a medium saucepan, bring water to a boil. Add the peas and cook for 3-4 minutes until tender. Drain and set aside.
Make the Cream Sauce: In the same saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1 minute, stirring constantly to create a roux. Slowly pour in the milk while whisking continuously, ensuring no lumps form. Bring the mixture to a simmer, letting it thicken for about 3-4 minutes.
Add the Cream: Stir in the heavy cream (if using), season with salt, pepper, sugar, and a pinch of nutmeg for added flavor. Continue cooking for another minute until the sauce is creamy and smooth.
Combine and Serve: Add the cooked peas back into the cream sauce, stirring gently to coat the peas evenly. Cook for another 2 minutes to heat the peas through.
Garnish: Remove from heat, garnish with fresh parsley if desired, and serve hot as a comforting side dish.
