Sausage, Egg, and Cheese Breakfast Roll-Ups

Ingredients:
8 large flour tortillas
1/2 lb breakfast sausage (crumbled)
6 large eggs
1/4 cup milk
1 cup shredded cheddar cheese
Salt and pepper (to taste)
2 tbsp butter (for cooking eggs)
2 tbsp butter (for warming tortillas)

Directions:
Cook the Sausage: In a large skillet over medium heat, cook the crumbled breakfast sausage until browned. Remove from the skillet and set aside.
Prepare the Scrambled Eggs: In a medium bowl, whisk together the eggs, milk, salt, and pepper. In the same skillet, melt 2 tablespoons of butter and pour in the egg mixture. Cook the eggs, stirring gently until fully scrambled. Remove from heat.
Warm the Tortillas: In a separate pan, warm the tortillas with a small dab of butter for 1-2 minutes on each side until they are pliable.
Assemble the Roll-Ups: Lay each tortilla flat and place a spoonful of sausage, scrambled eggs, and a sprinkle of shredded cheese in the center.
Roll Them Up: Roll the tortillas tightly by folding in the sides and rolling from bottom to top. Secure with a toothpick if necessary.
Serve: Serve immediately while warm, or wrap in foil for an easy, on-the-go breakfast.
