Egg Roll Stir-Fry

Ingredients:
1 lb ground pork (or chicken)
1 tablespoon sesame oil
1 cup shredded carrots
2 cups coleslaw mix (shredded cabbage and carrots)
3 green onions, chopped
2 cloves garlic, minced
1 tablespoon ginger, minced
3 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame seeds (for garnish)
Salt and pepper to taste

Directions:
Cook the Meat: In a large skillet or wok, heat sesame oil over medium-high heat. Add the ground pork and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
Add Aromatics: Stir in garlic and ginger, cooking for about 1 minute until fragrant.
Incorporate Vegetables: Add shredded carrots and coleslaw mix to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
Season: Pour in the soy sauce and rice vinegar. Mix well and cook for another 2 minutes. Season with salt and pepper to taste.
Finish and Serve: Remove from heat and stir in chopped green onions. Garnish with sesame seeds before serving.
