Cheesecake Egg Rolls
Ingredients:
8 egg roll wrappers
8 oz cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
1/2 cup chocolate chips (optional)
Oil for frying
Powdered sugar for dusting
Fresh strawberries or sauce for serving (optional)
Directions:
Prepare the Filling:
In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Mix until smooth and creamy. If using, fold in the chocolate chips.
Assemble the Egg Rolls:
Place an egg roll wrapper on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the cream cheese filling onto the center of the wrapper.
Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a bit of water on the edges to help seal.
Heat the Oil:
In a large skillet or deep fryer, heat oil over medium-high heat until hot (about 350°F or 175°C).
Fry the Egg Rolls:
Carefully place the egg rolls in the hot oil, a few at a time, without overcrowding the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
Serve:
Dust with powdered sugar and serve warm, with fresh strawberries or sauce for dipping if desired.
