Best Ever Baked Beans
Ingredients:
6 slices bacon, chopped
1 small onion, diced
1 green bell pepper, diced
3 (15 oz) cans of navy beans (or any other white beans), drained and rinsed
1 (15 oz) can of kidney beans, drained and rinsed
1 (15 oz) can of pinto beans, drained and rinsed
1 cup ketchup
¾ cup brown sugar, packed
¼ cup molasses
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1 tbsp apple cider vinegar
1 tsp garlic powder
1 tsp smoked paprika
Salt and black pepper, to taste
Directions:
Cook the Bacon:
In a large skillet, cook the chopped bacon over medium heat until it becomes crispy. Remove the bacon from the skillet and set it aside, leaving the bacon fat in the skillet.
Sauté the Onion and Bell Pepper:
Add diced onion and green bell pepper to the skillet with the bacon fat. Sauté for about 5-7 minutes, until the vegetables are softened and translucent.
Mix the Sauce:
In a medium bowl, whisk together ketchup, brown sugar, molasses, Dijon mustard, Worcestershire sauce, apple cider vinegar, garlic powder, smoked paprika, salt, and black pepper.
Combine the Beans and Sauce:
In a large mixing bowl, add the navy beans, kidney beans, and pinto beans. Pour the sauce over the beans and stir to combine. Add the sautéed onions, bell pepper, and crispy bacon to the mixture and gently stir again.
Bake the Beans:
Preheat your oven to 350°F (175°C). Transfer the bean mixture to a large baking dish. Cover with aluminum foil and bake for 1 hour.
After 1 hour, remove the foil and bake uncovered for an additional 15-20 minutes, until the beans are thickened and bubbly.
Serve:
Once baked, let the beans cool slightly before serving. They go perfectly with barbecue dishes, burgers, or as a standalone side!
