Chocolate Kahlua Cake with Strawberry Buttercream Frosting

Ingredients:
For the Cake:
1 ¾ cups all-purpose flour
1 ¾ cups granulated sugar
¾ cup unsweetened cocoa powder
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
½ cup Kahlua liqueur
For the Strawberry Buttercream Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
½ cup strawberry puree (fresh or frozen)
2-3 tbsp heavy cream (as needed)
1 tsp vanilla extract
Pinch of salt

Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Prepare the Cake Batter:
In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla extract. Mix until well combined.
Carefully stir in boiling water and Kahlua until the batter is smooth (the batter will be thin).
Bake the Cake:
Divide the batter evenly between the prepared cake pans.
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
Make the Strawberry Buttercream Frosting:

In a large mixing bowl, beat the softened butter on medium speed until creamy.
Gradually add the powdered sugar, mixing on low speed until well combined.
Add strawberry puree, vanilla extract, and salt. Beat on medium-high speed until light and fluffy. If the frosting is too thick, add heavy cream one tablespoon at a time until desired consistency is reached.
Assemble the Cake:
Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of strawberry buttercream on top.
Place the second cake layer on top and frost the top and sides of the cake with the remaining strawberry buttercream.
Serve:
Garnish with fresh strawberries on top if desired. Slice and serve this deliciously decadent cake!
