Mississippi Mud Potatoes
Ingredients:
4 large russet potatoes, peeled and cubed
1/2 cup butter, melted
1 cup shredded cheddar cheese
1 cup cooked bacon, crumbled
1 cup sour cream
1/2 cup chopped green onions
1 teaspoon garlic powder
Salt and black pepper, to taste
1/2 cup shredded mozzarella cheese (optional, for extra cheesiness)
Fresh parsley, chopped (for garnish, optional)
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Prepare Potatoes:
In a large bowl, combine the cubed potatoes, melted butter, garlic powder, salt, and black pepper. Toss to coat the potatoes evenly.
Bake Potatoes:
Spread the seasoned potatoes in the prepared baking dish. Cover with aluminum foil and bake in the preheated oven for 30 minutes.
Add Toppings:
Remove the foil and stir the potatoes. Sprinkle the shredded cheddar cheese, crumbled bacon, and chopped green onions over the top. If using, add the shredded mozzarella cheese for extra cheesiness.
Bake Again:
Return the dish to the oven and bake, uncovered, for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
Add Sour Cream:
Remove from the oven and let cool slightly. Dollop the sour cream over the top and gently stir it in, ensuring it’s well combined.
Serve:
Garnish with fresh chopped parsley if desired. Serve hot.
