Apple Cranberry Coleslaw
Ingredients:
1 small head of green cabbage, finely shredded
2 large carrots, grated
1 apple, julienned or thinly sliced
1/2 cup dried cranberries
1/4 cup red onion, finely chopped
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and black pepper, to taste
1/4 cup chopped pecans or walnuts (optional, for extra crunch)
Instructions:
Prepare the Vegetables:
In a large bowl, combine the shredded cabbage, grated carrots, julienned apple, dried cranberries, and chopped red onion.
