Grilled Cajun Lemon Shrimp
Ingredients:
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 tablespoon smoked paprika
2 cloves garlic, minced
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 tablespoon honey (optional, for sweetness)
1 tablespoon fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Skewers (soaked in water if wooden)
Directions:
Prepare the Marinade:
In a medium bowl, whisk together olive oil, Cajun seasoning, smoked paprika, minced garlic, lemon juice, lemon zest, and honey (if using).
Add the shrimp to the marinade, tossing to coat well. Cover and refrigerate for 20-30 minutes to let the flavors meld.
Preheat the Grill:
Preheat your grill to medium-high heat (about 400°F / 200°C). If using a grill pan indoors, heat the pan over medium-high heat.
Skewer the Shrimp:
Thread the marinated shrimp onto the skewers, making sure to leave a little space between each one for even cooking.
Grill the Shrimp:
Place the shrimp skewers on the preheated grill. Cook for 2-3 minutes on each side until the shrimp turn pink and are opaque, with a slight char on the edges.
Garnish and Serve:
Remove the shrimp from the grill and sprinkle with freshly chopped parsley.
Serve hot with lemon wedges on the side for extra zing.
