Mexi-Chicken Avocado Cups Recipe
Ingredients:
2 large avocados
1 cup cooked chicken, shredded
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels (fresh, frozen, or canned)
1/4 cup red onion, finely chopped
1/4 cup cherry tomatoes, diced
1/4 cup cilantro, chopped
1/2 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
Juice of 1 lime
1 tsp cumin
1 tsp chili powder
Salt and pepper, to taste
Instructions:
Prepare Avocados: Cut the avocados in half and remove the pits. Carefully scoop out some of the avocado flesh to create a larger cavity for the filling. Dice the scooped-out avocado flesh and set aside.
Mix Filling: In a large bowl, combine the shredded chicken, black beans, corn, red onion, cherry tomatoes, cilantro, and diced avocado. Add the lime juice, cumin, chili powder, salt, and pepper. Mix well to combine.
Stuff Avocados: Spoon the chicken mixture into the avocado halves, filling them generously.
Top with Cheese: Sprinkle shredded cheese over the top of each filled avocado.
Serve: Serve immediately as a fresh and healthy meal or appetizer.
