Peanut Butter Blossom Cookies
Ingredients:
1 cup creamy peanut butter
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup granulated sugar (for rolling)
36 chocolate kisses, unwrapped
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
Mix Wet Ingredients:
In a large bowl, combine the peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until smooth and well blended.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.
Form the Cookies:
Roll the dough into 1-inch balls and then roll each ball in granulated sugar to coat. Place the balls on the prepared baking sheets about 2 inches apart.
Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The cookies will appear soft but will firm up as they cool.
Add Chocolate Kisses:
Immediately after removing the cookies from the oven, gently press a chocolate kiss into the center of each cookie. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
