Chicken Cordon Bleu Meatloaf

Ingredients:
For the Meatloaf:
1 lb ground chicken
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup milk
1 large egg
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
For the Filling:
4 oz Swiss cheese, sliced
4 oz deli ham, sliced
For the Glaze:
1/4 cup ketchup
2 tbsp Dijon mustard
1 tbsp brown sugar

Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, milk, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined, but do not overmix.
Assemble the Meatloaf:
On a clean surface or a sheet of parchment paper, shape the meat mixture into a rectangle about 1-inch thick. Lay the slices of ham evenly over the top, followed by the slices of Swiss cheese.
Carefully roll the meatloaf away from you, starting with the edge closest to you, to enclose the filling. Pinch the edges to seal it well. Place the rolled meatloaf seam side down on the prepared baking sheet or in the loaf pan.
Make the Glaze:
In a small bowl, whisk together the ketchup, Dijon mustard, and brown sugar. Brush half of the glaze over the top of the meatloaf.
Bake:
Bake the meatloaf in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C). Brush the remaining glaze over the meatloaf in the last 10 minutes of cooking.
Rest and Slice:
Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps the juices redistribute.
Serve:
Slice the meatloaf and serve with your favorite sides, such as mashed potatoes or steamed vegetables.
