Homemade Beef & Cheese Empanadas!
Ingredients:
For the Dough:
2 ½ cups all-purpose flour
1 teaspoon salt
½ cup unsalted butter, cold and cubed
1 large egg
½ cup cold water (adjust as needed)
For the Filling:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon paprika
½ teaspoon chili powder (optional for spice)
Salt and pepper to taste
1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
1 tablespoon olive oil
For Assembly:
1 egg, beaten (for egg wash)
Instructions:
Step 1: Make the Dough
In a large mixing bowl, combine the flour and salt.
Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the egg and cold water. Gradually add to the flour mixture, mixing until a dough forms. Adjust with more water if needed.
Knead the dough on a floured surface for about 2-3 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Step 2: Prepare the Filling
In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 3-4 minutes.
Add the garlic and cook for another minute.
Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
Stir in the cumin, paprika, chili powder (if using), and season with salt and pepper. Cook for an additional 2-3 minutes.
Remove from heat and let the filling cool slightly. Stir in the shredded cheese.
Step 3: Assemble the Empanadas
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
On a floured surface, roll out the dough to about 1/8 inch thick. Cut out circles using a round cutter (about 4-5 inches in diameter).
Place a spoonful of the beef and cheese filling in the center of each circle.
Fold the dough over to form a half-moon shape and press the edges to seal. You can crimp the edges with a fork for a decorative touch.
Place the empanadas on the prepared baking sheet.
Step 4: Bake
Brush the tops of the empanadas with the beaten egg for a golden finish.
Bake in the preheated oven for 20-25 minutes, or until golden brown.
Step 5: Serve
Let the empanadas cool slightly before serving. They can be enjoyed warm or at room temperature.
