Asparagus Stuffed Chicken Breast!

Asparagus Stuffed Chicken Breast!

Ingredients:
4 boneless, skinless chicken breasts
1 cup fresh asparagus, trimmed and cut into 1-inch pieces
4 oz cream cheese, softened
½ cup shredded mozzarella cheese
2 cloves garlic, minced
1 teaspoon dried Italian seasoning (or herbs de Provence)
Salt and pepper, to taste
2 tablespoons olive oil
½ cup chicken broth (for baking)
½ teaspoon paprika (for garnish, optional)

Instructions:
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Step 2: Prepare the Filling
In a bowl, mix together the asparagus, cream cheese, mozzarella cheese, garlic, Italian seasoning, salt, and pepper until well combined.
Step 3: Prepare the Chicken Breasts
Place the chicken breasts between two pieces of plastic wrap or parchment paper. Gently pound them to an even thickness (about ½ inch).
Season both sides of the chicken breasts with salt and pepper.
Step 4: Stuff the Chicken
Divide the asparagus mixture among the chicken breasts, placing it in the center of each.
Fold the sides of the chicken over the filling and secure them with toothpicks or kitchen twine to keep the filling from spilling out.
Step 5: Sear the Chicken
In a large oven-safe skillet, heat the olive oil over medium-high heat.
Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
Step 6: Bake
Once the chicken is browned, pour the chicken broth into the skillet and bring it to a simmer.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
Step 7: Serve
Remove the chicken from the oven and let it rest for a few minutes before slicing.
Drizzle with the pan juices and garnish with paprika if desired.
Serve with your favorite sides, such as rice, quinoa, or a fresh salad.
