Parmesan Zucchini

Ingredients:
4 medium zucchinis, sliced into rounds or spears
2 tablespoons olive oil
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Directions:
Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Prepare Zucchini: Place the zucchini slices or spears in a large bowl. Drizzle with olive oil and toss until evenly coated.
Season: In a small bowl, mix together the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Sprinkle this mixture over the zucchini and toss again to coat well.
Arrange and Bake: Spread the zucchini in a single layer on the prepared baking sheet. Bake for 15-20 minutes or until the zucchini is tender and the Parmesan is golden brown.
Garnish and Serve: Remove from the oven and sprinkle with fresh parsley. Serve immediately as a side dish or snack.
