Funnel Cake Bites

Ingredients:
1 ½ cups all-purpose flour
2 tbsp granulated sugar
1 tsp baking powder
¼ tsp salt
2 large eggs
1 cup milk
½ tsp vanilla extract
Vegetable oil (for frying)
Powdered sugar (for dusting)
Optional toppings: Chocolate syrup, caramel, fresh berries, etc.

Instructions:
Heat the Oil:
In a large pot or deep fryer, heat about 2-3 inches of vegetable oil over medium heat to 350°F (175°C).
Prepare the Batter:
In a medium bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, whisk the eggs, milk, and vanilla extract.
Gradually combine the wet and dry ingredients, stirring until smooth and lump-free.
Fry the Funnel Cake Bites:
Use a tablespoon or small cookie scoop to drop small portions of batter into the hot oil. Fry in batches to avoid overcrowding.
Fry each batch for about 2-3 minutes, flipping halfway through, until golden brown on all sides.
Drain and Cool:
Remove the bites from the oil using a slotted spoon, and drain on a paper towel-lined plate.
Dust with Powdered Sugar:
Generously dust the funnel cake bites with powdered sugar while they’re still warm.
Serve:
Serve with optional toppings like chocolate syrup, caramel, or fresh berries.
