Ingredients:
2 cups shredded zucchini (about 2 medium zucchinis)
1 egg, lightly beaten
¼ cup grated Parmesan cheese
½ cup breadcrumbs (panko or regular)
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped (or 1 teaspoon dried parsley)
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
Olive oil, for greasing the baking sheet

Instructions:
Step 1: Prepare the Zucchini
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.
Place the shredded zucchini in a clean kitchen towel or cheesecloth, and squeeze out as much excess moisture as possible. This will prevent the bites from being too watery.
Step 2: Make the Zucchini Mixture
In a large bowl, combine the squeezed zucchini, beaten egg, grated Parmesan cheese, breadcrumbs, minced garlic, parsley, Italian seasoning, salt, and black pepper.
Mix everything together until well combined.
Step 3: Form the Bites
Scoop about 1 tablespoon of the mixture and form it into small, bite-sized balls or patties.
Place the bites on the prepared baking sheet, ensuring they are evenly spaced.
Step 4: Bake the Zucchini Bites
Bake in the preheated oven for 15-20 minutes, or until the bites are golden brown and crispy around the edges.
Flip them halfway through to ensure even browning.
Step 5: Serve
Remove from the oven and let them cool slightly before serving.
Serve warm with your favorite dipping sauce, such as marinara, ranch, or garlic aioli.
