Skillet Zucchini and Mushrooms
Ingredients:
2 medium zucchinis, sliced into half-moons
8 oz mushrooms, sliced (button, cremini, or your choice)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
Salt and pepper, to taste
¼ cup grated Parmesan cheese (optional)
Fresh parsley, chopped (for garnish, optional)
Instructions:
Step 1: Heat the Skillet
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Step 2: Sauté the Mushrooms
Add the sliced mushrooms to the skillet and sauté for about 5 minutes, or until they are browned and tender. Stir occasionally to prevent sticking.
Step 3: Add the Zucchini
Add the sliced zucchini to the skillet with the mushrooms.
Stir in the minced garlic, dried thyme, salt, and pepper. Sauté for an additional 4-5 minutes, or until the zucchini is tender but still slightly crisp.
Step 4: Add Cheese (Optional)
If using, sprinkle the grated Parmesan cheese over the zucchini and mushrooms. Stir to combine and allow the cheese to melt for about a minute.
Step 5: Serve
Remove from heat and garnish with fresh parsley if desired.
Serve warm as a side dish or over rice, quinoa, or pasta for a light meal.
