Garlic Parmesan Chicken Pasta Bake
Ingredients:
2 cups cooked chicken, shredded or cubed (rotisserie chicken works great)
12 oz penne pasta (or any pasta you prefer)
3 tablespoons butter
4 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups milk (whole or 2%)
1 cup chicken broth
1 ½ cups shredded Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes (optional)
Salt and pepper, to taste
1 cup shredded mozzarella cheese
½ cup breadcrumbs (optional, for extra crunch)
Instructions:
Step 1: Cook the Pasta
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain and set aside.
Step 2: Make the Garlic Parmesan Sauce
In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
Stir in the flour and cook for another 1-2 minutes, stirring constantly, to create a roux.
Gradually whisk in the milk and chicken broth, ensuring there are no lumps. Continue to cook, stirring frequently, until the sauce begins to thicken, about 3-5 minutes.
Add the Parmesan cheese, garlic powder, Italian seasoning, red pepper flakes (if using), and salt and pepper to taste. Stir until the cheese has melted and the sauce is smooth.
Step 3: Assemble the Bake
Add the cooked chicken and drained pasta to the skillet with the sauce. Stir until everything is well coated.
Pour the mixture into the prepared baking dish.
Sprinkle the top with the mozzarella cheese and breadcrumbs for extra crunch, if desired.
Step 4: Bake
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden on top.
For an extra crispy topping, broil for the last 2-3 minutes, watching carefully to prevent burning.
Step 5: Serve
