Mini Baked Parmesan Potato Rounds

Ingredients:
4 medium russet potatoes, sliced into 1/4-inch rounds
2 tablespoons olive oil
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried parsley (optional)
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)

Directions:
Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with nonstick spray.
Prepare Potatoes:
Wash and dry the potatoes thoroughly. Slice them into 1/4-inch rounds and place them in a large bowl.
Season the Potatoes:
Drizzle the olive oil over the potato slices and toss to coat evenly. In a small bowl, mix the Parmesan cheese, garlic powder, paprika, parsley, salt, and pepper. Sprinkle this mixture over the potato slices and toss again until the potatoes are well coated.
Arrange on Baking Sheet:
Lay the potato rounds in a single layer on the prepared baking sheet, making sure they don’t overlap.
Bake:
Bake the potatoes for 20-25 minutes, flipping halfway through, until golden brown and crispy on the edges.
Serve:
Garnish with chopped fresh parsley (optional) and serve hot as an appetizer or side dish with your favorite dipping sauce.
