Slow Cooker Chicken Bacon Ranch Sandwiches
Ingredients:
4 boneless, skinless chicken breasts
1 packet ranch seasoning mix
8 oz cream cheese, softened
1/2 cup chicken broth
1 cup shredded cheddar cheese
8 slices of cooked bacon, crumbled
4-6 sandwich rolls or buns
1/4 cup green onions, chopped (optional)
1/4 cup ranch dressing (optional for serving)
Directions:
Prepare the Slow Cooker:
Place the chicken breasts at the bottom of the slow cooker. Sprinkle the ranch seasoning packet evenly over the chicken.
Add Cream Cheese and Broth:
Place the softened cream cheese on top of the chicken and pour in the chicken broth.
Cook the Chicken:
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender enough to shred.
Shred the Chicken:
Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker and mix it into the creamy sauce.
Add Bacon and Cheese:
Stir in the crumbled bacon and shredded cheddar cheese. Cover and let it cook for another 10-15 minutes until the cheese is melted and everything is well combined.
Assemble the Sandwiches:
Spoon the creamy chicken mixture onto sandwich rolls or buns. Optionally, drizzle with ranch dressing and sprinkle with green onions.
Serve:
Serve hot with your favorite side dishes like fries or a fresh salad.
