Ingredients:

1 tsp vanilla extract
1 cup whipped topping (like Cool Whip)
1 cup crushed shortbread cookies (plus extra for garnish)
Fresh mint leaves (for garnish, optional)

Directions:
Prepare the Strawberries:
In a bowl, mash half of the sliced strawberries with a fork until they’re slightly pureed. Set aside the remaining slices for garnish.
Make the Creamy Base:
