Best Chicken Salad Ever
Ingredients:
For the Chicken Salad:
3 cups cooked chicken, shredded or diced (about 2 large chicken breasts)
1 cup celery, finely chopped
½ cup red onion, finely chopped
1 cup grapes, halved (red or green)
½ cup slivered almonds (or walnuts)
½ cup mayonnaise (adjust to taste)
1 tsp Dijon mustard
1 tsp apple cider vinegar (optional)
Salt and pepper, to taste
½ tsp garlic powder (optional)
½ tsp onion powder (optional)
For Serving:
Lettuce leaves (for serving)
Bread or croissants (for sandwiches)
Optional toppings: sliced avocado, cheese, or fresh herbs (like dill or parsley)
Directions:
Prepare the Chicken:
If using uncooked chicken, boil, grill, or bake the chicken breasts until fully cooked. Let them cool, then shred or dice into bite-sized pieces.
Mix the Salad Ingredients:
In a large mixing bowl, combine the shredded chicken, chopped celery, red onion, halved grapes, and slivered almonds.
Make the Dressing:
In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar (if using), salt, pepper, garlic powder, and onion powder until smooth. Adjust seasoning to taste.
Combine:
Pour the dressing over the chicken mixture and gently toss until all ingredients are well coated.
Chill:
Cover the bowl and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld.
