Blueberry Muffin Cookies with Streusel
Ingredients:
For the Cookies:
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2 cups fresh blueberries (or frozen, thawed)
1/2 cup sour cream or Greek yogurt
For the Streusel Topping:
1/2 cup all-purpose flour
1/3 cup granulated sugar
1/3 cup brown sugar, packed
1/2 teaspoon ground cinnamon
1/4 cup unsalted butter, melted
Pinch of salt
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make the Cookie Dough:
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream (or Greek yogurt) until combined.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
Gently fold in the blueberries, taking care not to break them.
Prepare the Streusel Topping:
In a small bowl, combine flour, granulated sugar, brown sugar, ground cinnamon, melted butter, and a pinch of salt. Mix until crumbly.
Form the Cookies:
Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Sprinkle the streusel topping generously over each cookie.
Bake:
Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set. The cookies may look slightly underbaked but will continue to firm up as they cool.
Cool:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
