Cracker Barrel Homemade Chicken & Dumplings
Ingredients:
For the Chicken:
1 whole chicken (about 3-4 lbs)
8 cups water
1 large onion, chopped
3 cloves garlic, minced
3 celery stalks, chopped
3 carrots, chopped
Salt and pepper to taste
1 teaspoon dried thyme
For the Dumplings:
2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
1/4 cup shortening
3/4 cup buttermilk
Directions:
1. In a large pot, combine the chicken, water, onion, garlic, celery, carrots, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the chicken is cooked through and tender.
2. Remove the chicken from the pot and set aside to cool. Strain the broth and return it to the pot.
3. In a large bowl, combine flour, baking powder, and salt. Cut in the shortening until the mixture resembles coarse crumbs. Stir in buttermilk to form a dough.
4. On a floured surface, roll out the dough to about 1/4-inch thickness. Cut into small squares or strips.
5. Bring the broth back to a boil. Drop the dumplings into the boiling broth, one at a time, stirring gently to prevent sticking.
6. Reduce heat and simmer for 15-20 minutes, or until the dumplings are cooked through and tender.
7. While the dumplings are cooking, remove the skin and bones from the chicken, and shred the meat.
8. Add the shredded chicken back into the pot with the dumplings, stirring to combine. Heat through before serving.
