Ingredients:
1 cup pancake mix
1/2 cup water
1/4 tsp vanilla extract
20 large marshmallows
Vegetable oil (for frying)
Powdered sugar (for dusting)
Chocolate sauce or caramel sauce (optional, for dipping)

Instructions:
Prepare the batter:
In a bowl, mix the pancake mix, water, and vanilla extract until smooth. The batter should be thick enough to coat the marshmallows. Add a little more water if needed.
Heat the oil:
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Make sure there is enough oil to submerge the marshmallows.
Coat the marshmallows:
Dip each marshmallow into the batter, making sure it is fully coated.
Fry the marshmallows:
Carefully drop the coated marshmallows into the hot oil, a few at a time. Fry for 30-60 seconds, or until they are golden brown. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
Dust and serve:
Dust the fried marshmallows with powdered sugar. Serve immediately with chocolate or caramel sauce for dipping, if desired.
