Broccoli, Rice, Cheese, and Chicken Casserole recipe
Ingredients
3 cups cooked chicken, diced or shredded
2 cups cooked rice (white or brown)
2 cups fresh or frozen broccoli florets
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 ½ cups shredded cheddar cheese (divided)
½ cup milk
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
½ cup breadcrumbs (optional, for a crunchy topping)
2 tablespoons butter, melted (optional, for the topping)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish with nonstick cooking spray or butter.
Step 2: Cook the Broccoli
If using fresh broccoli, steam it for about 3-4 minutes until tender. If using frozen broccoli, thaw it and drain any excess moisture.
Step 3: Combine the Ingredients
In a large mixing bowl, combine the cooked chicken, cooked rice, broccoli, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
Stir in 1 cup of the shredded cheddar cheese, reserving the remaining ½ cup for the topping.
Step 4: Assemble the Casserole
Spread the mixture evenly into the prepared baking dish.
Sprinkle the remaining ½ cup of cheddar cheese on top.
Step 5: Optional Topping
If you’d like a crunchy topping, mix the breadcrumbs with the melted butter and sprinkle it over the cheese layer.
Step 6: Bake the Casserole
Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
Step 7: Serve
Remove from the oven and let the casserole cool for a few minutes before serving.
