Ingredients:
1 1/2 cups fresh okra, finely chopped (or frozen, thawed)
1/2 cup cornmeal
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 egg, beaten
1/4 cup milk (or buttermilk for extra flavor)
1/4 cup diced onions
Oil for frying (vegetable or canola oil)

Directions:
Prepare the Ingredients:
Finely chop the okra, ensuring they are small enough to blend well into the batter. If using frozen okra, make sure to thaw and drain excess moisture.
Dice onions into small pieces.
Mix the Dry Ingredients:
In a large bowl, combine the cornmeal, flour, baking powder, salt, black pepper, garlic powder, and paprika.
Combine Wet Ingredients:
In a separate bowl, whisk the egg and milk together until well combined.
Make the Batter:
Slowly pour the wet ingredients into the dry mixture, stirring until smooth.
Add in the chopped okra and diced onions, folding them into the batter until evenly distributed.
Heat the Oil:
In a large skillet, heat about 1/4 inch of oil over medium-high heat. The oil should be hot but not smoking, around 350°F (175°C).
Form and Fry the Patties:
Using a spoon or small scoop, drop spoonfuls of the okra batter into the hot oil, flattening slightly to form patties.
Fry the patties for about 3-4 minutes per side, or until they are golden brown and crispy on the outside.
Remove from the skillet and drain on paper towels to remove excess oil.
Serve:
Serve the okra patties warm, either as a side dish or a savory snack. Pair with dipping sauces like ranch dressing or a spicy remoulade for extra flavor.
