Homemade Hamburger Helper Lasagna
Ingredients:
For the Meat Sauce:
1 lb ground beef (or turkey)
1 medium onion, diced
2 cloves garlic, minced
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes (with juice)
2 cups beef broth
2 tablespoons tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper
For the Cheese Mixture:
15 oz ricotta cheese
1 cup shredded mozzarella cheese (plus extra for topping)
1/2 cup grated Parmesan cheese
1 egg
1 tablespoon fresh parsley (or 1 teaspoon dried parsley)
For the Lasagna:
8-10 lasagna noodles (no-boil or regular)
Extra mozzarella cheese for topping
Directions:
Cook the Meat Sauce:
In a large skillet or saucepan over medium heat, brown the ground beef, onion, and garlic until the meat is no longer pink and the onion is translucent. Drain excess fat if necessary.
Stir in the tomato sauce, diced tomatoes, beef broth, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer and let it cook for about 10 minutes to thicken slightly.
Prepare the Cheese Mixture:
In a medium bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, and parsley. Mix well until smooth.
Assemble the Lasagna:
Preheat your oven to 375°F (190°C).
In a 9×13 inch baking dish, spread a thin layer of the meat sauce on the bottom.
Place a layer of lasagna noodles over the meat sauce (3-4 noodles).
Spread half of the cheese mixture over the noodles, followed by a layer of meat sauce. Repeat the layers (noodles, cheese mixture, meat sauce).
Top with remaining noodles, the last of the meat sauce, and sprinkle with extra mozzarella cheese.
Bake:
Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray).
Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
Cool and Serve:
Allow the lasagna to cool for about 10 minutes before slicing. This will help it hold its shape when serving.
Garnish with additional parsley if desired and serve warm.
