Honey Cinnamon Roasted Sweet Potatoes

Ingredients:
4 medium sweet potatoes, peeled and diced into 1-inch cubes
3 tablespoons olive oil
3 tablespoons honey
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
Fresh parsley or thyme, for garnish (optional)

Directions:
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Prepare the Sweet Potatoes:
In a large bowl, combine the diced sweet potatoes with olive oil, honey, ground cinnamon, salt, black pepper, and nutmeg (if using). Toss well to ensure the sweet potatoes are evenly coated.
Arrange on a Baking Sheet:
Spread the coated sweet potatoes in a single layer on a baking sheet lined with parchment paper or a silicone mat. Make sure they are not overcrowded for even roasting.
Roast the Sweet Potatoes:
