BLT Pasta Salad
Ingredients:
8 oz (about 2 cups) elbow macaroni or rotini pasta
6 strips of bacon, cooked and crumbled
1 cup cherry tomatoes, halved
1 cup romaine lettuce, chopped
1/2 cup red onion, finely chopped
1/2 cup mayonnaise
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
Salt and pepper to taste
1/2 cup shredded cheddar cheese (optional)
Fresh parsley or basil, for garnish (optional)
Directions:
Cook the Pasta:
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
Prepare the Dressing:
In a small bowl, whisk together the mayonnaise, apple cider vinegar, garlic powder, salt, and pepper until well combined.
Combine the Ingredients:
In a large mixing bowl, combine the cooked pasta, crumbled bacon, cherry tomatoes, romaine lettuce, and red onion. Pour the dressing over the pasta mixture and toss gently to coat everything evenly.
Add Cheese (Optional):
If desired, stir in the shredded cheddar cheese for an extra layer of flavor.
Chill and Serve:
Cover the salad and refrigerate for at least 30 minutes before serving to let the flavors meld. Serve chilled, garnished with fresh parsley or basil if desired.
