Taco Lasagna
Ingredients:
12-15 lasagna noodles (regular or no-boil)
1 lb ground beef or turkey
1 small onion, diced
1 packet taco seasoning
1 cup water
2 cups refried beans
1 cup salsa
2 cups shredded cheddar cheese (divided)
1 cup sour cream
1 cup corn (canned or frozen, drained)
1 cup black olives, sliced (optional)
Fresh cilantro or green onions, for garnish (optional)
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Cook the Meat:
In a large skillet over medium heat, brown the ground beef or turkey with the diced onion until fully cooked. Drain any excess fat.
Add Taco Seasoning:
Stir in the taco seasoning and water. Bring to a simmer and cook for about 5 minutes until the mixture thickens slightly. Remove from heat.
Prepare the Noodles:
If using regular lasagna noodles, cook according to package instructions until al dente, then drain. If using no-boil noodles, skip this step.
Layer the Ingredients:
In a 9×13 inch baking dish, spread a thin layer of salsa on the bottom.
Place a layer of noodles over the salsa (about 3-4 noodles).
Spread half of the refried beans over the noodles.
Add half of the meat mixture on top, followed by a layer of corn, a layer of salsa, and a layer of cheddar cheese (1 cup).
Repeat the layering process with another layer of noodles, the remaining refried beans, the remaining meat mixture, corn, salsa, and another cup of cheese.
Finish with a final layer of noodles, the remaining salsa, and the last cup of cheddar cheese on top.
Spread the sour cream evenly over the top layer of cheese and sprinkle with black olives (if using).
Bake:
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
Cool and Serve:
Let the taco lasagna cool for about 10 minutes before slicing. Garnish with fresh cilantro or green onions if desired.
