Hamburger Potato Casserole
Ingredients:
1 lb ground beef (or ground turkey)
1 small onion (chopped)
2 cloves garlic (minced)
4 cups frozen hash browns (or 3-4 medium potatoes, peeled and sliced)
1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
1 cup sour cream
1 cup shredded cheddar cheese (divided)
1/2 cup milk
1 tsp salt
1/2 tsp black pepper
1 tsp paprika (optional)
1/2 tsp garlic powder (optional)
Fresh parsley (for garnish, optional)
Instructions:
Preheat the oven to 350°F (175°C).
Cook the ground beef:
In a large skillet over medium heat, cook the ground beef and chopped onion until the meat is browned and the onion is translucent. Drain excess fat if necessary. Add minced garlic and cook for another minute until fragrant.
Prepare the casserole mixture:
In a large mixing bowl, combine the cooked ground beef mixture, frozen hash browns (or sliced potatoes), cream of mushroom soup, sour cream, half of the shredded cheddar cheese, milk, salt, pepper, paprika, and garlic powder (if using). Mix until well combined.
Transfer to baking dish:
Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
Top with cheese:
Sprinkle the remaining shredded cheddar cheese over the top of the casserole.
Bake:
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
Serve:
Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired.
