Cheesy Garlic Green Beans

Ingredients:
1 lb fresh green beans, trimmed
3 cloves garlic, minced
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/4 teaspoon red pepper flakes (optional, for heat)
Salt and pepper, to taste
1 tablespoon unsalted butter
Fresh parsley, chopped (optional, for garnish)

Directions:
Blanch the Green Beans:
Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes, until they are bright green but still crisp. Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again and set aside.
Sauté the Garlic:
In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but be careful not to burn the garlic.
Cook the Green Beans:
Add the blanched green beans to the skillet with the garlic. Season with salt, pepper, and red pepper flakes (if using). Toss to coat the beans in the garlic mixture and cook for about 5 minutes, until the beans are tender but still have a slight bite.
Add the Cheese:
Sprinkle the Parmesan cheese over the green beans and gently toss to combine. Then, sprinkle the shredded mozzarella evenly over the top of the beans. Cover the skillet and cook for an additional 2-3 minutes, until the cheese is melted and bubbly.
Serve:
Transfer the cheesy garlic green beans to a serving dish. Garnish with fresh parsley if desired, and serve immediately while hot and gooey.
