Peach Cobbler Pound Cake Recipe
Ingredients:
For the Cake:
1 cup unsalted butter (softened)
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream (or plain yogurt)
2 cups fresh or frozen peaches (peeled and diced)
For the Peach Topping:
1 cup fresh or frozen peaches (peeled and diced)
1/4 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon cinnamon
1 tablespoon lemon juice
For the Glaze (optional):
1 cup powdered sugar
2-3 tablespoons milk
1 teaspoon vanilla extract
Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or loaf pan.
Make the peach topping:
In a small bowl, combine the diced peaches, sugar, cornstarch, cinnamon, and lemon juice. Toss until the peaches are coated and set aside.
Prepare the cake batter:
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Mix until just combined.
Gently fold in the diced peaches from the topping mixture.
Pour and layer:
Pour half of the batter into the prepared pan. Spread half of the peach topping over the batter. Pour the remaining batter on top, and finish with the remaining peach topping. Use a spatula to gently swirl the topping into the batter for a marbled effect.
Bake the cake:
Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, you can tent it with aluminum foil.
Cool and glaze:
Let the cake cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
If using the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled cake.
