Baked Parmesan Zucchini Recipe
Ingredients:
2 medium zucchinis (sliced into 1/4-inch thick rounds)
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (panko or regular)
1 teaspoon garlic powder
1 teaspoon Italian seasoning (or dried oregano)
Salt and pepper (to taste)
1 tablespoon olive oil
Cooking spray (or additional olive oil for greasing)
Instructions:
Preheat the oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or spray it lightly with cooking spray.
Prepare the zucchini:
Slice the zucchinis into 1/4-inch thick rounds. Pat them dry with a paper towel to remove excess moisture.
Make the coating:
In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
Coat the zucchini:
Drizzle the olive oil over the zucchini slices and toss to coat evenly. Then, dip each zucchini slice into the Parmesan breadcrumb mixture, pressing gently to adhere.
Arrange on baking sheet:
Place the coated zucchini slices in a single layer on the prepared baking sheet.
Bake:
Bake in the preheated oven for 15-20 minutes, or until the zucchini is tender and the coating is golden brown and crispy. You can flip the slices halfway through for even browning.
Serve:
Remove from the oven and let cool slightly. Serve warm as a side dish or snack. Enjoy!
