Ground Beef and Peppers Skillet Recipe
Ingredients:
1 pound ground beef
1 red bell pepper (diced)
1 green bell pepper (diced)
1 yellow bell pepper (diced)
1 small onion (chopped)
2 cloves garlic (minced)
2 tablespoons olive oil
1 can (14.5 ounces) diced tomatoes (drained)
1 teaspoon smoked paprika
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
Salt and pepper (to taste)
1/4 cup beef broth (optional, for more saucy consistency)
Chopped fresh parsley or cilantro (for garnish)
Instructions:
Cook the ground beef:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat and set the beef aside.
Sauté the vegetables:
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the onion and garlic, and sauté for about 2 minutes, or until the onion becomes translucent.
Add the diced bell peppers and cook for another 4-5 minutes, or until they start to soften.
Combine the beef and seasonings:
Return the cooked ground beef to the skillet. Stir in the diced tomatoes, smoked paprika, chili powder, cumin, oregano, salt, and pepper. If you prefer a saucier dish, add the beef broth.
Simmer:
Lower the heat and let the mixture simmer for 5-10 minutes, allowing the flavors to meld and the peppers to become tender.
Garnish and serve:
Remove from heat and sprinkle with chopped fresh parsley or cilantro. Serve hot as a main dish on its own, over rice, or with tortillas.
