Chocolate Oatmeal No Bake Cookies Recipe
Ingredients:
1/2 cup unsalted butter
2 cups granulated sugar
1/2 cup milk
1/4 cup unsweetened cocoa powder
1/2 cup peanut butter (creamy or chunky)
1 teaspoon vanilla extract
3 cups quick-cooking oats
Pinch of salt (optional)
Instructions:
Prepare a baking sheet:
Line a baking sheet with parchment paper or wax paper and set aside.
Make the chocolate mixture:
In a medium saucepan, melt the butter over medium heat. Add the sugar, milk, and cocoa powder, stirring until well combined. Bring the mixture to a rolling boil, then cook for 1 minute, stirring constantly.
Add the peanut butter and vanilla:
Remove the saucepan from heat and immediately stir in the peanut butter and vanilla extract until smooth.
Mix in the oats:
Add the quick-cooking oats to the saucepan and stir until well combined. If desired, add a pinch of salt for a touch of balance.
Form the cookies:
Using a spoon or a cookie scoop, drop the mixture onto the prepared baking sheet, forming mounds of your desired size. Flatten slightly if preferred.
Let the cookies set:
Allow the cookies to cool and set at room temperature for 30-60 minutes, or refrigerate them for quicker setting.
