Spinach Ricotta Stuffed Chicken Breasts
Ingredients:
4 boneless, skinless chicken breasts
1 cup ricotta cheese
1 cup fresh spinach, chopped
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
Salt and pepper, to taste
1 tablespoon olive oil

Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
Prepare Chicken Breasts:
Using a sharp knife, carefully slice a pocket into each chicken breast without cutting all the way through. Season the chicken breasts on both sides with salt, pepper, garlic powder, onion powder, and Italian seasoning.
Make the Filling:
In a medium bowl, mix together the ricotta cheese, chopped spinach, Parmesan cheese, mozzarella cheese, garlic powder, and a pinch of salt and pepper.
Stuff the Chicken Breasts:
Stuff each chicken breast with the spinach and ricotta mixture, ensuring the filling is evenly distributed. You can secure the edges of the chicken with toothpicks to prevent the filling from spilling out while cooking.
Sear the Chicken:
Heat the olive oil in a large oven-safe skillet over medium heat. Once hot, add the stuffed chicken breasts and sear for 3-4 minutes per side, or until they are golden brown.
Bake the Chicken:
Transfer the seared chicken breasts to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear.
Rest and Serve:
Remove the chicken from the oven and let it rest for a few minutes before slicing. Serve with your favorite side dishes, like roasted vegetables or a light salad.
