Cheesy Tortellini with Bacon and Brussels Sprouts

Ingredients:
1 (9 oz) package cheese tortellini (fresh or frozen)
6 slices bacon, chopped
2 cups Brussels sprouts, trimmed and halved
2 cloves garlic, minced
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/2 teaspoon red pepper flakes (optional, for heat)
Fresh parsley, chopped (for garnish)

Directions:
Cook the Tortellini:
In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.
Cook the Bacon:
In a large skillet over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and drain on paper towels, leaving the drippings in the skillet.
Sauté the Brussels Sprouts:
In the same skillet, add the halved Brussels sprouts to the bacon drippings. Sauté for about 5-7 minutes, or until they are tender and slightly browned. Add the minced garlic and cook for an additional minute until fragrant.
Make the Sauce:
Lower the heat and pour in the heavy cream. Stir to combine and bring to a simmer. Add the mozzarella cheese and Parmesan cheese, stirring until the cheeses melt and the sauce is creamy. Season with salt, pepper, and red pepper flakes (if using) to taste.
Combine Everything:
Add the cooked tortellini and crispy bacon back into the skillet. Gently toss everything together until the tortellini is well coated with the cheesy sauce.
Serve:
Serve hot, garnished with chopped fresh parsley for a pop of color.
