Apple Fritter Cake Recipe

Ingredients:
For the cake:
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup milk
For the apple filling:
2 large apples, peeled, cored, and chopped (Granny Smith or Honeycrisp work well)
1/3 cup granulated sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon butter
For the glaze:
1 cup powdered sugar
2-3 tablespoons milk
1/2 teaspoon vanilla extract

Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
Prepare the apple filling:
In a skillet over medium heat, melt 1 tablespoon of butter. Add the chopped apples, granulated sugar, cinnamon, and nutmeg. Cook for 5-7 minutes until the apples are tender and coated in a syrupy sauce. Set aside.
Make the cake batter:
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, mixing well.
In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing until just combined.
Assemble the cake:
Pour half of the cake batter into the prepared baking dish and spread it evenly. Add half of the apple filling, then top with the remaining batter. Spoon the rest of the apple filling on top and use a knife to gently swirl it into the batter.
Bake:
Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool for about 10 minutes.
Prepare the glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the warm cake.
Serve:
Let the cake cool slightly before slicing. Enjoy warm or at room temperature. S
