Broccoli, Rice, Cheese, and Chicken Casserole Recipe
Ingredients:
2 cups cooked chicken, diced or shredded
2 cups cooked rice (white or brown)
2 cups fresh broccoli florets, steamed (or 1 package frozen broccoli, thawed)
1 can (10.5 oz) condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
2 cups shredded cheddar cheese, divided
1/2 cup breadcrumbs (optional, for topping)
2 tablespoons melted butter (if using breadcrumbs)
Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Combine the ingredients:
In a large bowl, mix together the cooked chicken, cooked rice, steamed broccoli, cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, salt, pepper, and 1 1/2 cups of the shredded cheddar cheese. Stir until everything is well combined.
Transfer to the baking dish:
Spread the mixture evenly into the prepared baking dish.
Add cheese and breadcrumbs:
Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top. If using breadcrumbs, mix them with the melted butter and sprinkle over the cheese.
Bake:
Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the cheese is melted and slightly golden.
Serve:
Let the casserole cool for a few minutes before serving.
