Oatmeal Raisin Cookies Recipe
Ingredients:
1 cup (2 sticks) unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups old-fashioned rolled oats
1 cup raisins
1/2 cup chopped walnuts (optional)
Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
Cream the butter and sugars:
In a large bowl, use an electric mixer to beat the butter, brown sugar, and granulated sugar together on medium speed until light and fluffy, about 2-3 minutes.
Add the eggs and vanilla:
Beat in the eggs, one at a time, followed by the vanilla extract, mixing well after each addition.
Mix the dry ingredients:
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
Combine wet and dry ingredients:
Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. Stir in the rolled oats, raisins, and walnuts (if using) until evenly distributed.
Shape the cookies:
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. Be careful not to overbake for a chewy texture.
Cool:
Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
