Cheesy Broccoli Stuffed Chicken Breasts Recipe

Cheesy Broccoli Stuffed Chicken Breasts Recipe

Ingredients:
4 boneless, skinless chicken breasts
1 cup steamed broccoli, chopped
1 cup shredded cheddar cheese
1/4 cup cream cheese, softened
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and pepper, to taste
2 tablespoons olive oil
1/2 teaspoon smoked paprika (optional)

Instructions:
Preheat the oven:
Set the oven to 375°F (190°C).
Prepare the filling:
In a medium bowl, mix together the chopped broccoli, cheddar cheese, cream cheese, Parmesan cheese, and minced garlic until well combined. Season with a pinch of salt and pepper.
Prep the chicken breasts:
Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
Season the outside of the chicken breasts with garlic powder, onion powder, smoked paprika (if using), salt, and pepper.
Stuff the chicken breasts:
Fill each chicken pocket with the broccoli and cheese mixture, securing with toothpicks if needed to keep the filling inside.
Sear the chicken:
In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and cook for 3-4 minutes on each side, until they are golden brown.
Bake the chicken:
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F (74°C)).
Serve:
Let the chicken rest for a few minutes before removing the toothpicks. Serve the Cheesy Broccoli Stuffed Chicken Breasts with your favorite sides, like mashed potatoes or a fresh salad.
