Crispy Chicken Parmesan
Ingredients:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 cup Italian-style breadcrumbs
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 jar (24 oz) marinara sauce
1/2 cup fresh basil, chopped (optional)
Salt and black pepper, to taste
1/4 cup olive oil (for frying)
1 tablespoon garlic powder
1 tablespoon dried Italian seasoning
Spaghetti or pasta of choice (for serving)
Directions:
Prep the Chicken:
Preheat the oven to 375°F (190°C).
Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness using a meat mallet or rolling pin (about 1/2-inch thick). Season both sides with salt, pepper, garlic powder, and Italian seasoning.
Bread the Chicken:
Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese.
Dredge each chicken breast first in the flour, then dip it in the eggs, and finally coat it in the breadcrumb mixture, pressing down to adhere the crumbs evenly.
Fry the Chicken:
Heat olive oil in a large skillet over medium heat. Fry the breaded chicken breasts for 3-4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
Bake with Sauce and Cheese:
In a baking dish, spread a thin layer of marinara sauce. Place the crispy chicken breasts on top. Spoon more marinara sauce over each piece, and then sprinkle shredded mozzarella cheese generously over the sauce.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted, bubbly, and slightly golden.
Serve:
Once out of the oven, garnish with fresh chopped basil if desired. Serve immediately with your favorite pasta, such as spaghetti, tossed with extra marinara sauce.
