Hawaiian Pineapple Coconut Fluff
Ingredients:
1 can (20 oz) crushed pineapple, drained
1 can (14 oz) sweetened condensed milk
1 cup shredded sweetened coconut
1 package (3.4 oz) instant vanilla pudding mix
1 tub (8 oz) whipped topping (Cool Whip), thawed
1 cup mini marshmallows
1/2 cup chopped pecans (optional)
1/2 cup maraschino cherries, halved (optional for garnish)
1 teaspoon vanilla extract
Directions:
Mix the Base:
In a large mixing bowl, combine the drained crushed pineapple, sweetened condensed milk, vanilla pudding mix, and vanilla extract. Stir well until everything is smooth and fully incorporated.
Fold in Coconut and Marshmallows:
Add the shredded coconut and mini marshmallows into the pineapple mixture. Gently fold them in to keep the mixture fluffy.
Add Whipped Topping:
Gently fold in the whipped topping (Cool Whip) until the fluff mixture is creamy and evenly combined.
Optional Add-ins:
If desired, fold in chopped pecans for added crunch and texture. You can also add half of the maraschino cherries to the mix, reserving the rest for garnish.
Chill:
Refrigerate the Hawaiian Pineapple Coconut Fluff for at least 1 hour before serving. This helps the flavors meld together and the fluff to set.
Serve and Garnish:
Before serving, top with the remaining maraschino cherries for a colorful garnish. You can also sprinkle more shredded coconut or chopped pecans on top for presentation.
