Garlic Tomato Baked Chicken

Ingredients:
4 boneless, skinless chicken breasts
4 cloves garlic, minced
1 (15 oz) can diced tomatoes, undrained
1/2 cup chicken broth
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 cup grated Parmesan cheese
Fresh basil leaves for garnish (optional)

Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
Season and Sear the Chicken:
Pat the chicken breasts dry with a paper towel. Season with salt, black pepper, and Italian seasoning on both sides.
In a large skillet, heat the olive oil over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown (they don’t need to be cooked through). Transfer the seared chicken to the prepared baking dish.
Prepare Garlic Tomato Sauce:
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the diced tomatoes (with juices), chicken broth, and red pepper flakes if using. Stir to combine, and let the mixture simmer for 5 minutes to slightly reduce.
Assemble and Bake:
Pour the garlic tomato sauce over the chicken breasts in the baking dish. Sprinkle the Parmesan cheese evenly over the top of the chicken and sauce.
Cover the dish with foil and bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Serve:
Once baked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with fresh basil leaves for added flavor and color, if desired. Serve over pasta, rice, or alongside vegetables for a complete meal.
