Delightful Bananas Foster Cobbler Recipe
Ingredients:
For the Bananas Foster Filling:
4 ripe bananas, sliced
½ cup unsalted butter (1 stick)
¾ cup brown sugar, packed
1 teaspoon vanilla extract
¼ cup dark rum (optional, can substitute with more vanilla extract)
½ teaspoon cinnamon (optional)
For the Cobbler Topping:
1 cup all-purpose flour
¼ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
½ cup milk
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Make the Bananas Foster Filling:
In a large skillet over medium heat, melt the ½ cup of butter.
Stir in the brown sugar and cook until the mixture is bubbly, about 2-3 minutes.
Add the sliced bananas, vanilla extract, rum, and cinnamon (if using). Cook for another 2-3 minutes, gently stirring until the bananas are coated and slightly softened. Remove from heat.
Prepare the Cobbler Topping:
In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
In another bowl, combine the milk, melted butter, and vanilla extract. Mix until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.
Assemble the Cobbler:
Pour the Bananas Foster filling into a greased 9×9-inch or similar baking dish, spreading it evenly across the bottom.
Drop spoonfuls of the cobbler topping over the banana filling, covering it as much as possible.
Bake:
Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and cooked through.
Serve:
Allow to cool slightly before serving. It’s delicious on its own or served warm with a scoop of vanilla ice cream or whipped cream.
