Mini Meatloaf Muffins with Mashed Potato Frosting
Ingredients:
For the Meatloaf Muffins:
1 lb ground beef (or turkey)
1/2 cup breadcrumbs (or crushed crackers)
1/4 cup grated Parmesan cheese
1/4 cup milk
1/4 cup ketchup (plus more for topping)
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried Italian herbs (or oregano)
For the Mashed Potato Frosting:
2 large potatoes, peeled and cubed
1/4 cup milk (adjust as needed)
2 tablespoons butter
Salt and pepper to taste
Optional: 1/4 teaspoon garlic powder for flavor
Instructions:
1. Prepare the Meatloaf Muffins:
Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, ketchup, egg, onion, garlic, Worcestershire sauce, salt, pepper, and Italian herbs. Mix until well combined.
Divide the meat mixture evenly among the muffin cups, filling each about 2/3 full.
Top each muffin with a small dollop of ketchup.
2. Bake the Muffins:
Bake in the preheated oven for about 20-25 minutes, or until the meatloaf muffins are cooked through and no longer pink in the center. An internal temperature of 160°F (70°C) is recommended.
Once done, remove from the oven and let cool slightly.
3. Prepare the Mashed Potatoes:
While the muffins are baking, place the cubed potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add milk, butter, salt, pepper, and garlic powder (if using). Mash until smooth and creamy. Adjust milk and seasoning to your preference.
4. Frost the Muffins:
Once the meatloaf muffins have cooled slightly, use a piping bag or a spoon to top each muffin with the mashed potatoes, resembling frosting.
5. Serve:
Serve the mini meatloaf muffins warm, and enjoy this fun and comforting dish!
