Banana Cheesecake
Ingredients:
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ tsp cinnamon (optional)
½ cup unsalted butter, melted
For the Banana Cheesecake Filling:
3 ripe bananas, mashed
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
½ cup sour cream
2 tbsp all-purpose flour
For the Whipped Cream Topping:
1 cup heavy cream
2 tbsp powdered sugar
1 tsp vanilla extract
Banana slices for garnish (optional)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
Make the Crust:
In a medium mixing bowl, combine the graham cracker crumbs, sugar, cinnamon (if using), and melted butter.
Press the mixture firmly into the bottom of the prepared springform pan to form an even crust.
Bake the crust for 8-10 minutes, then remove from the oven and allow it to cool.
Prepare the Banana Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add the sugar and vanilla extract, and mix until fully combined.
Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
Stir in the mashed bananas, sour cream, and flour. Mix gently until the batter is smooth.
Pour the Filling:
Pour the banana cheesecake batter over the cooled crust in the springform pan. Spread it out evenly.
Bake the Cheesecake:
Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly golden.
Turn off the oven and let the cheesecake cool inside the oven with the door slightly open for about 1 hour (this helps prevent cracking).
After cooling, transfer the cheesecake to the refrigerator and chill for at least 4 hours, or overnight.
Prepare the Whipped Cream Topping:
In a medium bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
Once the cheesecake is fully chilled, spread or pipe the whipped cream on top of the cheesecake.
Garnish and Serve:
Garnish the cheesecake with fresh banana slices if desired.
Slice and serve your creamy banana cheesecake.
